Serves up 2 hearty bowls of morning goodness.
Ingredients
- 3/4 cup oat bran (Bob’s Brand)
- 2 cups water
- 2 cups chicken broth
- 1 tbsp butter
- 1 tbsp tahini
- 1 tbsp soy sauce
- 1/2 tbsp miso paste
- 4 cups spinach
- 2 7-minute eggs
- 4 tbsp olive oil
Instructions
- Combine oats, water, chicken broth, butter, tahini, soy sauce, miso paste, and in a pot, stir vigorously and bring to a boil. Simmer for 3 minutes, stirring occasionally to prevent sticking to the bottom of the pot.
- Turn off heat, add spinach, gently stir to incorporate and let sit for 2 minutes.
- Serve into bowls, drop in 7-minute eggs cut in half lengthwise. Salt and pepper the whole bowl, and drizzle generously with olive oil. Allow ingredients to meld and cool for 10 minutes.
