Savory Porridge

Serves up 2 hearty bowls of morning goodness.

Ingredients

  • 3/4 cup oat bran (Bob’s Brand)
  • 2 cups water
  • 2 cups chicken broth
  • 1 tbsp butter
  • 1 tbsp tahini
  • 1 tbsp soy sauce
  • 1/2 tbsp miso paste
  • 4 cups spinach
  • 2 7-minute eggs
  • 4 tbsp olive oil

Instructions

  1. Combine oats, water, chicken broth, butter, tahini, soy sauce, miso paste, and in a pot, stir vigorously and bring to a boil. Simmer for 3 minutes, stirring occasionally to prevent sticking to the bottom of the pot.
  2. Turn off heat, add spinach, gently stir to incorporate and let sit for 2 minutes.
  3. Serve into bowls, drop in 7-minute eggs cut in half lengthwise. Salt and pepper the whole bowl, and drizzle generously with olive oil. Allow ingredients to meld and cool for 10 minutes.
